How to Bake with Finch 00 Pizza Flour
• After the first rise, store dough (covered) in the fridge for up to 48 hours. Before baking, let it come to room temperature, shape, and bake!
• For a crispy crust, add cheese when the edges begin to brown, about two-thirds through baking.
• Each bag makes about ten 12″ pizzas.
Neapolitan-Style Pizza Crust Recipe
Ingredients:
– 2 cups (232g) Finch 00 Pizza Flour
– 1/8 tsp active dry or instant yeast
– 1/2 tsp sugar
– 1 1/4 tsp salt
– 3/4 cup (170g) lukewarm water (40°C to 46°C)
1. Mix ingredients into a rough dough. Cover and let rise at room temperature for 12–24 hours.
2. Divide dough, shape into balls, and let rise for 45 minutes.
3. Preheat oven to 260°C with a baking stone inside.
4. Stretch dough into a 10–12″ circle on a floured surface.
5. Add sauce, cheese, and toppings.
6. Bake on the hot stone for 8–12 minutes, until bubbly and charred on the edges.
